Zucchini Bread

Add your fresh zucchini to make this delightful bread.  This mix makes two loaves.

Additional Ingredients: 4 C Fresh Zucchini (grated), 2 Eggs, 2 tsp Vanilla Extract, 3/4 C Unsalted Butter (melted)

Directions: Preheat oven 350 deg - grease 2 loaf pans
Drain zucchini of excess moisture, add to bowl and add the mix, plus eggs, vanilla extract, and melted butter - blend well. Pour half of batter into each loaf pan, bake for 50 minutes or until tooth pick comes out clean. Cook for 10 minutes before turning out on wire racks to cool.
